Why can’t I put a large order in the day before I want to pick up?
Real sourdough takes time. The lovely loaves that go into the oven in the morning start their lives three days before that! Modern bread production methods kick all the benefits of this deliciously slow fermentation process to the kerb to speed up production. We often do have enough stock to cover though so it’s worth checking the shop.
Which of your products are sourdough?
All our breads and some of our pastries are made exclusively with sourdough starters! We choose to make some of our pastries with high quality baker’s yeast, to achieve the best rise and flavour. If you are a sourdough fan, talk to our team aboot fit’s fit!
Do you make any gluten free products?
There are two main reasons we don’t make gluten free products - in order to ensure a product is entirely gluten free, as we are a small bakery working out of one site we would need to dedicate the whole bakery space to gluten free production processes to conform to gluten free standards. We do stock many gluten free products in our shop though, including crackers and crispbreads.
This is an interesting area for sourdough producers and some of our team who have had historical issues with gluten as there are some indications from research that sourdough production improves blood glucose response and digestibility. We are also interested in the recent research from Australia, the Netherlands, Italy and the UK which suggests that gluten in itself may not be inherently harmful in the absence of coeliac disease or wheat allergy.
The other reason is that in order to produce gluten free bakery products like croissants and bread manufacturers commonly use a lot of ultra processed ingredients which research has suggested may have negative health outcomes so we avoid them in our recipes.
Are any of your products vegan?
All our bread range is entirely vegan, that includes our rolls, fougasse and foccacia! To make vegan pastries and enriched breads however, manufacturers commonly use ultra processed fats and oils which research has suggested may have negative health outcomes so we avoid them in our recipes. We use high quality butter instead which the recipes are designed to contain.
